Zucchini Noodles with Pesto Recipe

Prep. 20 minutes     Serves 4

 3 medium zucchini

1 8oz. container pesto

 Using a julienne peeler or box grater with largest holes facing up, run zucchini along peeler or grater to create long strands.  Add to pot of salted boiling water and cook 5 – 8 minutes until zucchini is tender.  Drain, plate and add 1 to 2 tablespoons of pesto.  Mix together.  Optional: add mushrooms, avocado, tomatoes, chickpeas, walnuts, peppers, olives, grated parmesan cheese, etc.
