4 grilled chicken breasts sliced thin 4 – 8 servings
1 grilled eggplant sliced thin
1 container Romarsi Pesto Level: easy
1 tomatoe sliced thin
1 8 oz. mozzarella sliced thin
8 slices Ciabatta Bread or
1 loaf Italian Bread
Spread 1 tablespoon Romarsi Pesto on 1 side of each slice of bread. Layer chicken breasts, eggplant, tomatoe and mozzarella on bread.
Optional: Grill both sides of the sandwich so that bread is crispy and mozzarella melts slightly.
Go vegetarian by substituting mushrooms or zucchini for chicken.
